I believe that local shops and food producers should be at the heart of the community: local farmers, bakers, fishmongers, butchers and other independent retailers. I am committed to championing small-scale artisan producers in all of my dishes.
My philosophy of cooking is down to earth - seasonal dishes made with the finest seasonal local ingredients have the ability to take us out of our everyday.
